Healthy Sandwich

Let's try to eat healthy so that we could minimize the contents of sugar and fat in our bodies. Today I made myself what I consider a healthy sandwich for breakfast.  Healthy doesn't mean TAK SEDAP.  Healthy doesn't also mean you don't eat PEMBERIAN & NIKMAT ALLAH.  Remember, too much of anything is not good for us. Let me quote and example, asparthame is supposed to be good for us because it helps us to reduce the consumption of sugar; but on the other hand, too much of asparthame can cause CANCER. I read that somewhere on internet and the newspaper many years ago.  So what we need to do is be MODERATE in everything we do - so that we could make the most of God's nature and live a great life.  Back to my breakfast today...two days ago, I discovered a new product line by Gardenia which they named the "Sommerset Cottage".  I picked the wholemeal multi grain & seeds.  There's a little crunch when you bite into the bread...errr... why am I promoting Gardenia here? Hmmm.... Sorry, I'm a little distracted.  Anyway, I prepared myself quite a lean sandwich, I'm not so sure how much in calories they total up to, but I'd say they're healthy sandwiches.  Here's the simple recipe for the simple very filling sandwich:



Healthy Sandwich





Ingredients
4     slices of Gardenia wholemeal multi grain & seeds bread
2     large leaves of butter head lettuce
Shredded  steamed chicken (as much as you like)
Margarine for spread (I spread on only one side of the sandwich)

Preparation method
1.     Spread one side of your sandwich with margarine
2.     Arrange shredded chicken & caramelized onion
3.     Top with butter head lettuce
4.     Sandwich them with the two remaining sliced of bread.

Voila! Done!  Enjoy your "healthy" sandwich.  Will be back later with other recipes.  Have a great weekend, my friends...

Minute Things I Learned from My Mother

Being the eldest and the only daughter, household chores are nothing unfamiliar for me.  Over the years, I learned so many things from dearest mom.  They are things you acquire being the right hand to my mom for some decades. I just wanna share 'em with you...yang mana boleh diguna-pakai, sila2 lah mencubanya.

1.  Setelah bangun pagi, terus pergi mandi dan berus gigi supaya badan segar dan muka pun nampak berseri2 (tak lah nampak sangat mmg baru bangun tido)
2.  Setiap kali selepas memasak, mandi lagi supaya hilang bau2 masakan yang melekat kat baju, badan, rambut.
3.  Bila rasa badan kotor jer, mandi lagi.
4.  Sebelum solat, supaya badan kita bersih...mandi. 
5.  Kalau mencuci pinggan mangkuk, cuci gelas2/cawan2 dulu, kemudian sudu garpu; kerana gelas/cawan dan sudu garpu tak begitu berminyak...jadi items tersebut mudah dicuci kalau tak bercampur dengan pinggan/mangkuk lauk yang selalunya mesti berminyak2. Selepas mencuci 2 items yang disebut tadi, barulah cuci pinggan2 dan mangkuk2 lauk.
6.  Susun peralatan yang dicuci tadi tu mengikut size, she calls that "space management".
7.  Apabila mahu mencedokl lauk dari mangkuk lauk, gunakanlah tangan kiri untuk memegang sudu lauk tu. Alasannya, supaya sudu lauk tu tak kotor (kan kotor kalau pegang ngan tangan kanan yg digunakan untuk menyuap makanan ke dalam mulut-kalau makan ngan tangan lah). Kalau sudu lauk tu dah kotor, orang lain yang duduk makan semeja dengan kita pun geli nak pegang sudu lauk tu.  Logic gak kan?
8.  Kalau memasak, memasaklah dengan ikhlas...supaya orang makan pun rasa sedap,
9.  Kalau kemas katil, biar betul2 kemas dan sedap mata memandang dan tak landing atas katil sehingga tiba waktu malam....Kalau tak, asyik nak baring jer.
10. Kalau nak tido, berus gigi supaya bila bangun tido esok paginya, mulut takde la berbau busuk.

Sepuluh perkara ni saja yang terfikir oleh ku buat masa ini, yang lain2 I will share with you all in the next change.

Caramelized Onion

Ini kira macam bawang goreng la...tapi bukan bawang goreng rangup yang kita tabur atas makanan.  Tapi yang ini bawang goreng yang seumpama sos.  Boleh digunakan untuk jadi sandwich topper, pizza, atau dijadikan sos. Ni style omputih la... tapi saya modify sikit, sebab dalam recipe asli, selalunya ada letak balsemic vinegar yang tak mudah nak dicari, dan saya tak pasti samada orang Islam boleh makan ke tak balsemic vinegar tu.  Walau bagaimanapun, setelah saya olah balik, boleh tahan juga lah...walau pun tidak serupa recipe asli.

Cara membuatnya adalah sangat mudah dan saya buat dalam masa yang tidak terlalu lama, sebab saya tak suka bawang tu jadi terlalu gelap warnanya, tetapi jika anda suka boleh goreng dengan lebih lama supaya warnanya agak gelap dan rasanya lebih sedap.


Caramelized Onion





Bahan-bahan
Bawang besar sebanyakyang anda mahu
* saya gunakan 4 bawang besar merah dan 1 kuning.
Garam
Brown sugar (lebih kurang 1 sudu teh...saya pernah cuba dengan 1 sudu makan...masih tidak terlalu manis)
Sapphire Sauce
Black pepper
Sedikit stock ayam (kalau takde pun tak mengapa)


Cara membuatnya
1.     Bawang dibelah dua, kemudian dihiris kasar2 secara membujur

2.     Panaskan frying pan dan letak minyak (saya kurangkan minyaknya).  Bila cukup panas masukkan saja bawang yang dihiris tadi.  Api biar sederhana sahaja sebab kita nakkan gula asli dari bawang besar itu keluar dan menggelapkan warna bawang tadi.

3.     Masukkan garam, brown sugar, black pepper. Kacau dari masa ke semasa sehingga bawang semakin gelap warnanya, tapi jangan pula sampai hangus ya.

4.     Masukkan sedikit stok ayam dan Sapphire Sauce secukupnya dan rasa.  Kalau ada yang kurang boleh lah ditambah.  Jangan masukkan terlalu banyak stok ayam kerana kita bukan nak buat sup bawang.

5.     Bila warnanya sudah cukup gelap, boleh matikan api dan sejukkan.  Saya tak suka bawang terlalu gelap jadi saya masak tak lama. Asalkan bawang sudah layur, saya rasa sudah mencukupi sebab saya suka ianya ada rasa rangup2 sedikit. Terpulang pada citararasa masing2 samada nak betul2 manisnya keluar dan warnanya gelap atau seperti yang saya suka.

Boleh disimpan di dalam peti ais dan digunakan bila perlu.  Saya paling suka makan dengan sandwich dan burger.

Sapphire Sauce

Sapphire sauce ini saya bancuh sendiri, sesuai untuk dijadikan sos cicah atau diguna dalam masakan. Saya share recipenya dengan kawan2...

Sapphire Sauce

Bahan-bahannya
3 tbsp     tomato ketchup (tomato sause)
2 tbsp     chilli sauce
1 tbsp     oyster sauce
1 tbsp     Maggi seasoning sauce
1 tbsp     AgroMas Chilli Kicap
1 tbsp     lemon juice
1 tbsp     brown sugar
4 tbsp     hot water

Cara membuatnya
Campurkan kesemua bahan2 di dalam satu mangkuk, digaul rata kemudian dimasukkan ke dalam botol sos dan simpan di dalam peti ais.  Ianya tahan lama.

The Must-Have things and Auxiliary Items in My Kitchen

The kitchen is my "office".  I can't work in a kitchen with no essential items.  Let me just share with you what I have in my kitchen...I think anyone can cook almost anything in my "office" with the loads of things I have. List of essential items I store in my kitchen:

1.     Rice, cooking oil
2.     Coarse salt, fine salt, turmeric powder, sugar
3.     Curry powder - meat & fish, kurma powder, chilli powder, soup powder
4.     Oyster sauce, chilli sauce, ketchup, soya sauce
5.     Spices - cinnamon, nutmeg, cardamom, clove, whole black pepper, coarse black pepper, coriander powder, tom yam powder

Those are the ones I MUST HAVE, and I'm listing down according to what I will see in my wet kitchen section.

Auxiliary items:
1.     Cukup rasa, ajinomoto, Knorr cubes which I use ONLY when called for.
2.     Paprika powder, my lasagna herbs which I make my own mix, ginger powder, sesame oil

Items in my fridge:
1.     Onion, fresh ginger, turmeric, garlic, asam jawa, belacan, red chilli, red cili padi, butter (super must!), margarine, plain yoghurt, celery, coriander leaves, carrots, bell pepper, eggs, Sapphire sauce (my own mix)

Freezer:
1.     The frozen curry puffs, frozen chicken pies (all made by me), chicken meat, mixed vege, instant roti canai, my cili boh (home made)

My dry items in the cabinet:
1.     Canned items - sweet condensed milk, evaporated milk, tuna in a can, sardine, mushroom, tomato paste, canned tomatoes, all sorts of sauces - cili padi sauce, kicap bercili. 

2.     Nescafe Gold, Coffee, tea of all sorts, creamer, Milo, Horlicks, pre-mix coffee in sachets, brown sugar (I don't use white sugar anymore), Nestum, instant oats, cream crackers

My drawer:
1.     Cutlery, my knives (yes, plural, I have many knives and they're very sharp, Ayah will sharpen my knives when he comes over), ladles - soup, senduk lauk, aih... macam2, however, the number is rather limited for the ladles and cutlery

My crockery
Yang ni kurang sikit sebab dapur I tak besar so I can't have too many crockery, but I can cater for at least 20 people at one serving.

My baking items:
1.     I have 2 boxes of baking utensils, you name it, they're all there, malas nak tulis.... banyak sangat.
2.     Tepung je dah bermacam2 jenis - all purpose, high-protein, corn flour

Electrical items:
1.     Fridge, electric jug, rice cooker (although jarang guna), convection oven, microwave oven (my brother can't live without this one), blender, mixer

....and most importantly, the gas stove and the tong gas.  I may have omitted those I forgot to list out.

Now, you tell me if you can't make one simple dish in my kitchen with all the things I have in store in my office.  Most people who have visited My Elysium would say, anyone can live for at least 2-3 months without going out at all. I LOVE MY KITCHEN and that is why I don't usually eat-out and that is also why I love to cook in my own kitchen because I have ALL the things I need to open my own restaurant here, at My Elysium :-)



A Test of Patience

Blog ni jadi blog masakan lak ya...terpengaruh dengan makcik saya yang suka memasak dan buat posting kat blog dia dan upload gambar2. Dia memang rajin...I don't think I can ever catch up with the number of entries she uploaded on her blog. Dengan internet capacity 3gig jer menggunakan maxis broadband ni, lagi la payah saya nak upload photos of what I've cooked, what more to share the recipes.  I usually COOK and not WRITE recipes, but it feels good to share with others. Not to be cocky on the tastiness of the dishes I cooked, but to feel the satisfaction of having others try out my recipes which I think turned out nice when I tried them myself.

After right now I may probably share something else than the recipes for reading pleasure and just to impart my opinions on certain things. Wholesome sket blog ni...kalau tak asyik cite pasal masak jer... boring gak tau. Penat masak masak masak tiap hari...tapi itu la yang saya tengok mak saya buat berpuluh2 tahun, and I have had the honor to be her aide in the kitchen.  Since I've moved to live by myself and my little brother (again, who's not so little anymore... he's 27 this year), I've been taking over my mom's chores in a smaller scale here at our Elysium.  Oh, that reminds me, I will write an entry on "My Elysium" soon, so you'd understand what is "My Elysium" when I keep referring to the term.

Today isn't totally a great day for me, but I'm held on till almost its end.  Early in the morning I headed to my parents' to see my sweet heart, Luqman (my first nephew) but I was rather in vain when he kept crying most of the day.  I think it maybe the consequence of him not seeing us for some time till today.  I love my nephews but honestly I couldn't stand it when I hear babies cry on and on and on.  Sigh...it's like the school recess and end-of recess bell reverberating on my eardrums.  I feel disappointed when I couldn't make him stop crying and couldn't understand what he wanted.  Owh...but before that, I was already stressed up with the fact that my netbook charger is already finding faults with me when it got spoilt.  I am disappointed because I am always a careful person in taking care of my personal belongings. When things like this happens, I get a bit stressed up.  When my nephew cried to the top of his voice, I get stressed. I went home feeling upset.

Now that I'm home, I did a little self-talk to myself.  Tomorrow I will try to handle Luqman better than today. I will keep trying to win my munchkin's heart no matter what it takes, although I almost lost my patience with him today.  Ni lah dia orang yang takde anak2 saudara... bila dapat, 2 orang sekali dalam setahun and now.. as they're growing...amikkk... layan la pe'el (perangai) mereka berdua. I'm determined to try again. Now I could smile... as for the netbook charger, I have no choice but to buy a new one. KOPAK bulan ni...dah la hari tu gi color rambut. But what the heck, duit boleh dicari... insya'Allah ada rezeki lain.

Tomorrow morning I gotta be at my parents rather early. I'm sending daddy to KLIA and I'm going to bring along Luqman. Let's just see how it goes tomorrow, I pray that he will not be as cranky as today. Please help me, God. Make me a more patient Mama Long, please?

Sapphire Chicken Chop

One of my favorite dishes is the chicken chop. I prefer poultry over beef most of the time, although I LOVE beef.  This chicken chop which I'm sharing the recipe with you in a short while, isn't something I've cooked quite recently but some time ago. I hope I still remember the recipe...however, you can always eyeball the ingredients tailoring to your preference/taste buds.  I'll write in Malay for the convenience of some friends to follow the recipe.

Sapphire Chicken Chop





Bahan A

2     keping ayam, bahagian dada
1     kotak cherry tomato
1/2  packet baby carrots
1     tangkai (betul ke penjodoh bilangan ni?) broccoli size sederhana, dipotong2 sederhana kecil
1     kotak fresh button mushroom (pilih yang sliced, ia memudahkan kerja2 anda)
1     bawang besar, dicincang halus
2     bawang putih, dicincang halus
1     packet sup cendawan segera Campbell's (yg selalunya kita tambah air saja tu)
1/4  cawan susu lowfat (atau lebih sedikit, mengikut consistency kepekatan yg anda mahu)
Sedikit brown sauce powder
Sedikit garam
Sedikit black pepper
Sedikit butter
Sedikit minyak
Sedikit bancuhan tepung jagung (jika perlu)


Bahan B
Sediakan 3 mangkuk atau pinggan yang cukup besar untuk mencelup isi dada ayam ke dalam bahan2 berikut:
Mangkuk 1 - tepung yang digaul rata dengan garam dan black pepper
Mangkuk 2 - telur yang dipukul bersama sedikit garam dan black pepper
Mangkuk 3 - breadcrumbs untuk memberi kerangupan (saya suka guna breadcrumbs yang putih)


Cara menyediakan chicken chop
1.     Alas dada ayam dengan plastic dan ketuk2 dengan pounder atau guna belakang frying pan pun boleh, sehingga isi ayam melebar dan nipis sedikit.

2.     Masukkan ke dalam mangkuk 1, pupuk dengan tepung dan tos2kan supaya tiada tepung berlebihan menyalut isi ayam tadi.

3.     Kemudian celupkan ayam tadi ke mangkuk 2 yang berisi telur, toskan supaya tidak banyak telur yang masuk ke dalam mangkuk 3.

4.     Masukkan ke dalam mangkuk 3 dan salut ayam itu dengan breadcrumbs. Pupuk betul2 supaya ayam disalut sepenuhnya dengan breadcrumbs.

5.     Masukkan ke dalam frying pan yang telah dipanaskank dan diletak sedikit minyak untuk menggoreng ayam tadi.  Api jangan terlalu besar, nanti hangus pula chicken chop tu! Breadcrumbs cepat hangus...nanti ayamnya hangus di luar dan tak masak pula di dalam.

6.     Setelah cukup masak, letak di atas towel kitchen untuk menyerap minyak dari ayam yang digoreng.



Cara menyediakan sayuran
1.     Kukus baby carrot dan broccoli buat seketika. Jangan terlalu lama, nanti lembik pula sayuran anda.  Saya rasa mungkin dalam 5-7 minit.  Setelah empuk (kalau saya suka setengah masak sebab rangup), terus masukkan ke dalam mangkuk yang berisi air sejuk atau ais supaya dapat mengekalkan kerangupan sayuran tersebut.


Cara menyediakan mushroom sauce
1.     Panaskan periuk anda, masukkan sedikit butter dan minyak masak dan tumis bawang besar serta bawang putih yang dicincang tadi. Setelah naik baunya, masukkan hirisan button mushroom, balik2 kan kemudian masukkan pula sup cendawan instant dalam packet yang dibancuh dengan sedikit air panas.  Kacau2 sehingga sebati.

2.     Masukkan pula susu low fat, brown sauce powder (sedikit demi sedikit, sila rasa bila anda meletaknya sebab brown sauce adalah masin), black pepper. Jika kepekatannya agak konsisten, tidak perlu tambah bancuhan tepung jagung.  Bila sauce sudah masak, tutup api dan masukkan cherry tomato dan gaul2 sedikit.

Bila semua bahan2 telah disiapkan, susunlah kesemuanya di dalam pinggan dan ia sudah sedia untuk dimakan.

Carrot Celery Soup

Bulan lepas, saya kena sakit tekak yang kronik. Sangat teruk, sehingga nak telan air liur pun sakit...apatah lagi makan atau minum.  Saya teringat di antara makanan yang saya masak sendiri sewaktu sakit (ya, sakit2 pun masak gak untuk diri sendiri...siapa lagi nak buat kalau bukan diri sendiri). Ni makanan untuk orang sakit akan tetapi ianya makanan sihat. Saya kongsi resipinya di sini. Malangnya gambar hanya ada satu dan tak berapa cantik...almaklumlah waktu itu sedang sakit...ala kadar je.


Carrot Celery Soup



Bahan-bahan
1     batang carrot
2     batang celery
1/2  isi ayam bahagian dada
1     bawang besar
2     biji bawang putih
2-3 hiris halia

sedikit garam
sedikit black pepper
sedikit oregano/thyme (kalau takde pun takpe)

Tambahan: 1 sudu makan plain yoghurt untuk hiasan (tidak dimasak bersama bahan2 lain)

Cara memasak
1.     Potong2 carrot, celery, bawang besar dan isi ayam; masukkan kesemua bahan2 lain ke dalam periuk,
tuang air cukup sekadar menutupi bahan2 dalam periuk (atau kurang sedikit jika mahu pekat) dan rebus sehingga agak empuk. Sewaktu merebus, letakkan garam, black pepper dan oregano/thyme.

2.     Sendukkan bahan2 yang direbus tadi ke dalam blender, dan kisar sehingga hancur.  Kemudian masukkan kembali ke dalam periuk tadi dan kacau2 bersama baki air rebusan. Kacau2 sedikit sehingga mendidih dan sup anda pekat sedikit.

3.     Sendukkan ke dalam mangkuk, letak satu sudu makan plain yoghurt dan hiaslah dengan daun apa2 yang anda nak pun... saya letak daun ketumbar, jadi ada la sedikit rasa daun ketumbar dan ia menambah sedap sup tadi.  Aaa....apa lagi?  Sup dah siap!  Silalah makan.  Ini makanan sihat tau. Tak percaya cuba tengok bahan2 yang saya gunakan dan cara memasaknya. :-)

Curry Pasta Noodle

This entry is something I brought backwards because I was contemplating the idea of publishing it.  It's a simple dish which I think almost anyone who can cook would know how to make this one.  So, I think I'll just post 2 photos I snapped just as a gastronomy, although it isn't beautifully decorated.  However, also to share the little twist I did to the recipe; I substituted the normal noodle with angel hair pasta. To have a nice texture of the pasta, just put water in your pot and heat to boil, slide in your angel hair pasta, stir a little and turn off the heat. Cover your pot and let it stand for about 3-4 minutes.  Toss your pasta under running cold water and drain....and it's ready for consumption.

Home Made Doughnuts

Haaaa...sudah sekian lama nak buat doughnut ikut recipe yang tertera di blog makcik saya, Cik Zalekha Ismail.  Dari seminggu ke bulan hinggalah dah masuk tahun baru.  Hari ini saya ingat tak nak memasak atau membuat kuih atau berada di dapur tetapi kerana dilanda kebosanan yang teramat sangat, kaki ni melangkah juga masuk ke dapur dengan niat nak mencuba buat doughnut yang berasaskan yeast.  Saya teringatkan recipe yang ada di blog makcik saya itu, tetapi saya ubah sedikit recipe tersebut.  Hasilnya alhamdulillah, sedap dan lembut dan mana yang saya goreng tu habis dibedal dek adik saya yang sememangnya tukang makan masakan2 saya di rumah ini.

So, tanpa meleceh2 lagi, saya nak share recipe doughnut ini yang asalnya datang dari makcik saya.


Sapphire Doughnuts

Front: plain doughnuts,  Back: tuna & chocolate fillings
Front: tuna          Back: chocolate


Bahan-bahan A

2 sudu makan   yis segera
1 sudu teh gula putih halus
3 sudu makan   susu cair
air suam dicampur dengan 3 sudu makan untuk mencukupkan sukatan 1/2 cawan


Bahan-bahan B
450 gram          tepung, diayak
50   gram          tepung roti (kalau takde guna 500 gram tepung biasa saja)
4 sudu makan   brown sugar
4 sudu makan   butter yang dicairkan
1 cawan           air suam
secubit             garam

Bahan-bahan C
Icing sugar
Serbuk kayu manis

*Kedua-dua bahan digaul rata


Cara membuat
1.     Semua bahan2 kering di bawah label Bahan A digaul rata di dalam mangkuk, kemudian susu cair + air yang kedua2nya suam dituang ke dalam mangkuk dan biarkan sebentar sehingga campuran mula naik kembang.

2.     Sementara menunggu bahan A kembang di dalam mangkuk, sediakan bahan2 B. Tepung dicampur dengan garam dan brown sugar, digaul rata. Buatkan lubang di tengah2 tepung dan masukkan butter yang telah dicairkan. Tuangkan bahan A yang telah kembang, uli perlahan2 dan masukkan air suam sedikit demi sedikit. Uli lah sehingga dough terbentuk di mana ianya tidak melekat lagi di tepi mangkuk uli dan tidak melekat lagi di jari2 anda.  Kalau melekat2 lagi, tambah sedikit lagi butter yang telah dicairkan tadi dalam setengah sudu makan dan tabur sedikit tepung bagi memudahkan dough itu lekang dari jari2 anda.

3.     Setelah habis menguli adunan, biarkan selama setengah jam ke 45 minit, tutup dengan tuala.  Adunan akan naik menjadi sekali ganda dari asal.

4.     Selepas 30-45 minit, anda sudah boleh membentuk doughnut anda menggunakan doughnut cutter atau potong saja mengikut bentuk yang ada suka.  Jika mahu meletak inti, lebarkan adunan supaya inti boleh diletakkan di tengah dan ditutup dengan dough tersebut.  Lakukan hingga habis dough.

5.     Panaskan kuali dan letak minyak secukupnya, dan pada api sederhana kecil, gorengkan doughnut yang telah dibentuk.  Sebaik diangkat, golekkan di atas bahan C; campuran icing sugar dan serbuk kayu manis, bagi plain doughnut dan yang berinti manis.  Mana yang berinti pedas, jangan la pulak digolek atas gula icing tu ya!

Penggunaan brown sugar dan icing sugar dalam penyediaan doughnut ini akan mengurangkan penggunaan gula yang terlalu banyak yang akan menyebabkan doughnut anda manisssss sesangat2.  Recipe yang saya kongsi ini menghasilkan doughnut yang tidak terlalu manis, jadi kalau anda nak letak inti pedas2 pun boleh gunakan adunan ini.

Sapphire's Chicken Pie

Am kinda lazy to write a lengthy entry today, so I'm just going to share my chicken pie recipe with you.  First thing first, you gotta make the pie filling...that's the most important part. Some like to make one whole pie in a large pie dish while others like to bake small ones.  I've done both and from my experience, the large one consume a longer time to get baked. Today's recipe is the mini chicken pie which will not take you too long to bake, but you have to spend some time to make the tasty filling and wrapping them into the cute mini pies.

Chicken Pie Filling



Ingredients for the filling

1        can of button mushroom, halved and slice into smaller pieces
1        carrot, diced
2        stalks of  celery, diced
3        medium-sized potatoes, diced
1        red bell pepper, diced
1 1/2  piece of chicken breast, diced
1        cup of frozen peas (optional)
1        large onion, diced
2        cloves garlic
1 tsp  finely chopped ginger
1/2     cup of evaporated milk
salt
pepper
corn flour (dissolved in some water)

*  You can also add paprika and chilli powder for better taste and color


Cooking method
1.     Heat up your wok, pour a little oil caramelize your diced onion and then add in garlic and ginger, then add in your diced  mushroom and stir for a while. This helps to eliminate the "tin" smell off the mushroom.  Then add in one by one, your diced vegetable except the frozen peas - potatoes, carrot, celery, red bell pepper, chicken (stirring each vegetable before adding others).  Pour about a cup of water to help tenderize the vegetables and chicken.

2.     Season your chicken pie filling with salt & pepper, but not with too much salt and also add in evaporated milk. Stir every now and then for even cooking, let the liquid reduce by half then add in the frozen peas, and then add corn flour mixture to thicken the filling.  Please taste and add more salt if needed.

3.     When the sauce of your filling has reduced and thickened as how you want it, let it cool before using it to fill your puff pastry.



Now, after cooking your filling, it's time to make the pie. I would suggest you to buy square puff pastry from the hypermarket, brand name "Kawan" (that's the only square-cut puff pastry I find available in the market. They are much easier to use.  So here is how you make the pie...


Chicken Pie



Ingredients

1      pack of square-cut puff pastry (10pc in a pack)
1     Egg (slightly beaten) to glue the sides of your pastry and for egg wash
Chicken pie filling which you have cooked earlier

Method
1.     Flour your working table/board, and place your pastry on it.  Spoon in your filling (about 1 and a 1/2 teaspoon). Brush the egg on the sides of your pastry and close up 2 corners of the pastry diagonally, giving it a slight pinch to glue the 2 corners. Then start pulling 1 corner to the previously glued corners and crimp the sides.  Do the same with the remaining 1 corner of the pastry. You should get a diamond-shape pie with 4 crimped sides.

1.     Preheat your oven to 210 C, line your baking tray with a baking sheet. Brush the egg wash on your pies before baking.

2.     The pies would normally take about 20-30 minutes to bake through, about 10 minutes before the baking ends, crank up your oven temperature to 220-230 C to give a crunchier crust on the outside of the pastry, bake till golden brown.

Kuih Cara Berlauk

Antara kuih tradisional kegemaran saya adalah kuih cara berlauk ni. Rasanya sekarang ni kuih cara berlauk sudah boleh diklasifikasikan sebagai kuih tradisional Melayu.  Saya nak kongsi satu cerita bagaimana lahirnya inspirasi untuk saya belajar buat kuih ini sendiri dan tidak membelinya lagi.

Bulan Ramadhan 2009, bila mana kami sekeluarga berkumpul di rumah mak & ayah untuk berbuka puasa bersama, adik saya dan isterinya pergi ke bazar Ramadhan Kelana Jaya untuk membeli kuih muih sebagai tambahan kepada juadah berbuka puasa yang ada di rumah. Sebaik sahaja masuk waktu berbuka puasa, kami pun makan kuih cara berlauk itu...sungguh mengecewakan! Bukan kerana tak sedap... tapi kerana ianya sudah BASI! Berniaga gi bazar Ramadhan untuk menambah pendapatan, tetapi menjual kuih2 yang sudah basi? Geram pun rasa di hati ni.  Maka ke longkang la perginya kuih cara berlauk yang dibeli tu.

Saya rasa sangat tidak berpuas hati, jadi keesokan harinya saya cuba buat sendiri kuih cara berlauk tu.  Pada ketika itu, saya mmg tak pernah buat kuih tu, tapi oleh kerana geram dengan orang yang menjual kuih cara berlauknya yang basi tu, saya nekad nak buat juga.  Oleh kerana takde acuan kuih cara, saya guna muffin tin. Uihhh... besar2 lag jadinya kuih cara berlauk saya tu. Masih saya ingat lagi, adik ipar tolong saya buat tapi waktu itu menggunakan oven untuk membakarnya.  Kuih yang dibuat tu menjadi...saya berkata dalam hati, maknanya saya boleh buat kuih ni sebenarnya.  Selepas dari hari itu saya berusaha pergi mencari dan membeli acuan kuih cara yang betul.

Sekarang saya sudah pandai buat kuih cara berlauk. Ahli keluarga dan kawan2 suka memakannya. Oleh kerana kuih tu menjadi setiap kali saya buat, maka saya berani mengatakan recipe yang saya gunakan adalah tepat...melainkan air tangan anda kurang sedap dan hati anda tidak ikhlas waktu membuatnya :-)

Jadi hari ini saya kongsi recipe kuih cara berlauk saya dengan pembaca semua.

Kuih Cara Berlauk

Bahan-bahan
2        cawan tepung
1        cawan santan
2 1/2  cawan air
2        biji telur
1        sudu teh garam (atau ikut rasa sendiri)
Inti kuih cara yang telah disediakan sehari lebih awal
Sedikit pewarna kuning jika mahu
Minyak sapi


Cara membuat

1.     Bancuh kesemua bahan di dalam blender, tepung hendaklah dicampur sedikit demi sedikit untuk mengelakkan dari berketul.

2.     Panaskan acuan kuih cara di atas dapur gas, setelah agak panas sapukan minyak sapi dan tuangkan bancuhan kuih ke dalam acuan2, jangan terlalu penuh nanti melimpah bila inti diletak.

3.     Apabila bahagian tepi kuih sudah mula mengeras, letakkan inti (dalam lebih kurang setengah sudu teh) di tengah2. Hati2 bila meletak inti di tengah supaya tidak melimpahi acuan. Proses ini perlu dilakukan dengan pantas supaya kuih tidak masak sepenuhnya sebelum inti habis diletak di kesemua acuan.  Setelah inti diletakkan, tutup acuan tetapi biar renggang sedikit sehingga kuih masak.

4.     Apabila kuih boleh dikeluarkan dengan mudah, maknanya ia sudah masak. Ulangi proses 1, 2 dan 3 sehingga bancuhan habis.

Untuk memudahkan menuang bancuhan ke dalam acuan, gunakan jug kecil. It makes your work easier. Bagi yang tidak pernah membuat kuih ini, mungkin kuih anda tidak berapa kemas/cantik jadinya, tetapi jangan putus asa, terus mencuba, practise makes perfect!  Selamat mencuba.  :-)

Missing my muchkins

It has only been a couple of days that I sent Harritz and his mummy off to Muar to rejoin his daddy, my brother. Sigh...Ini lah payahnya kalau dah sayang sangat. Dulu dengan Luqman begitu gak...Sampai nangis Mama Long ni takmo lepas Luqman balik Kulai dengan mummy dia. Tapi hari tu masa hantar Harritz, Mama Long tak nangis, knowing that his mummy will be coming to KL every month for work...so I'll get to see munchkin number 2, a.k.a. Harritz.

This is how my life is like since my brothers produced babies.  Becoming an aunt at the age of 41, my life became obsessed with the two little ones. We haven't had babies in 27 since my youngest brother was born.  Last year, we were so blessed to have Luqman and four months later, Harritz.  

My mother took care of my sisters-in-law during their confinement. I have the privilage to see them grow from 1 day young to a couple of months.  They are SOOOOO cute.  My heart leaped at just looking at them. Cair meleleh bila tengok muka 2 orang nihhhhhh. Macam nak pengsan pun ada.

Luqman dah tinggal di Kulai bersama mummy dia, and Harritz & his mummy baru rejoined his daddy on Tuesday 31st Jan yang baru ni. Tinggal la Mak Tok, Tok Ayah and Mama Long kesunyian tanpa suara2 high-pitched itu.  Uncle Su dorang takde rasa apa sangat kot sebab dia asyik gi kerja kerja kerja...sesekali jer tengok muka anak2 saudara yang comel2 belaka tu. Saya la yang sangat sedih bila asyik kena belek gambar2 jer. Nasib baik la gambar2 mereka berdua ada banyak dalam BlackBerry saya dan Facebook. Agaknya kalau gambar2 tu pun tau haus, gambar2 tu akan HAUS ditenung2 oleh saya.  Hujung minggu ini Harritz balik KL...saya tak sabar nak tengok dia, nak peluk cium dan cakap2 dengan dia. Luqman pula saya kena juga tunggu sehingga bulan Mac nanti untuk gigit2 dia.  

Ni dok tulis tentang anak2 buah saya, dah terasa bergenang lak air mata di kelopak mata saya. Lain kali saya tulis lagi tentang anak2 saudara saya yang comel2 belaka ini dan letak gambar2. I miss my nephews!!!
