A Hefty but Light Lunch

So, okay, I know I haven't been around for quite a while.  Why?  Errr....MALAS kot?  Not actually "malas" but I've been quite busy with family matters plus the fact that I now go to the gym much earlier so that I get to work out before members swarm in.  Anyway, I have been doing less cooking since my brother has been coming home late for the past 2 weeks. I either cook for myself or I don't cook at all, because if I do, my brother won't even touch the food after coming home at real late hour.

Anyway, today I feel like sharing this super easy salad recipe.  First thing first, I was too lazy to go out and buy stuff to cook, so I ran through what's in the fridge.  Found fruits that I thought I should finish before they turn stale and too rotten to eat. I guess what I have in the fridge today suffice for a single lunch.  Here's the recipe:


Fruit Salad with Shrimps

Ingredients for the dressing:

3     tbsp plain yoghurt
2     tbsp Sunquick Peach & Orange concentrate
1     tbsp extra virgin olive oil
1     tbsp lemon juice
salt & pepper

Method:
Mix everything in a bowl and set aside in the fridge to cool.


Ingredients for the salad:
1     orange
1     nectarine
1     pear

* anda boleh tukar nectarine dengan green apple dan ganti pear dengan red apple.

10   ekor udang, dikopek kulit dan dibelah tengahnya serta buang tali hitam tu ( apa kita panggil yang tali hitam pada udang tu ye?)
Daun2 salad (saya guna Romaine)


Method:
1.     Panaskan air yang diletak garam dalam periuk kecil sehingga mendidih. Bila air sudah mendidih, masukkan udang hanya seketika sehingga menjadi warna oren/pink, kemudian keluarkan dan masuk ke dalam mangkuk berisi ais untuk terus menyejukkan udang tadi.

2.     Buah2an dibuang kulit (terpulang, samada nak buang atau tidak) dan dipotong size2 kecil, (bite-size).

3.     Daun salad dicarik2 kasar.

4.     Campurkan kesemua buah2, daun salad dan udang yang dicelur tadi, toskan bersama salad dressing. Elok dihidangkan sejuk dan dimakan segera.
